Sweet Potato Avocado Toast

Description

Oven-roasted sweet potato slices topped with creamy mashed avocado, a fried egg, and your choice of finishing seasonings. A naturally gluten-free breakfast ready in 30 minutes.


Ingredients

1 large sweet potato, sliced lengthwise ¼ to ⅓ inch thick

1 ripe avocado

2 large eggs

1 tablespoon olive oil

1 tablespoon avocado oil

¼ teaspoon garlic powder

Salt and pepper to taste

Squeeze of fresh lemon juice

Optional toppings: everything bagel seasoning, red pepper flakes, microgreens, cherry tomatoes


Instructions

1. Preheat the oven to 400 °F. Line a baking sheet with parchment paper and brush lightly with olive oil.

2. Slice the sweet potato lengthwise into pieces ¼ to ⅓ inch thick. Arrange in a single layer on the sheet.

3. Brush the tops with the remaining olive oil. Sprinkle with garlic powder, salt, and pepper.

4. Bake for 20 minutes, flipping at the 10-minute mark, until the edges are golden and the center is fork-tender.

5. While the sweet potatoes bake, mash the avocado in a bowl with a pinch of salt and a squeeze of lemon juice.

6. Heat avocado oil in a nonstick skillet over medium heat. Fry the eggs for 2 to 3 minutes until the whites are set.

7. Spread mashed avocado on each warm sweet potato slice. Top with a fried egg, black pepper, and desired toppings. Serve immediately.

Notes

Use a mandoline for even slices if available.

Pat slices dry before oiling for better crisping.

Do not crowd the baking sheet — leave space between slices.

Let slices cool for 1 minute before adding avocado.

Storage: Baked slices without toppings in an airtight container, refrigerator, up to 4 days.

Freezing: Baked slices on a parchment-lined sheet until frozen, then in a freezer bag for up to 2 months.

Reheating: Toaster oven or standard oven at 375 °F for 5 to 7 minutes. Assemble fresh toppings after reheating.
