Description
A stunning three-layer frozen dessert combining chocolate, strawberry, and vanilla no-churn ice cream on a crunchy cookie crust. No ice cream maker needed.
Ingredients
Cookie Crust:
1½ cups crushed vanilla cookies (about 20 cookies) or graham crackers
Ice Cream Base:
2 cups heavy whipping cream, cold
1 can (14 oz) sweetened condensed milk
2 teaspoons vanilla extract, divided
Chocolate Layer:
3 tablespoons unsweetened cocoa powder
Strawberry Layer:
½ cup freeze-dried strawberries, ground to a powder
1 tablespoon strawberry jam
1 drop pink food coloring (optional)
Instructions
1. Line a 9×5-inch loaf pan with plastic wrap, leaving overhang on all sides. Spread crushed cookies across the bottom and press into a firm layer. Freeze while preparing ice cream.
2. Pour cold heavy cream into a large chilled bowl. Beat on high speed until stiff peaks form, about 3 to 4 minutes. Divide whipped cream evenly among three bowls.
3. Divide sweetened condensed milk equally among three small bowls (about 4.5 oz each).
4. Chocolate layer: Whisk cocoa powder and ½ teaspoon vanilla into the first portion of condensed milk. Fold gently into one bowl of whipped cream.
5. Strawberry layer: Stir ground freeze-dried strawberries, jam, and ½ teaspoon vanilla into the second portion. Add food coloring if desired. Fold into the second bowl of whipped cream.
6. Vanilla layer: Stir 1 teaspoon vanilla into the third portion. Fold into the remaining whipped cream.
7. Spread the chocolate layer over the cookie crust. Smooth the top. Add the strawberry layer, then the vanilla layer. Tap pan gently on the counter to remove air.
8. Fold plastic wrap over the top. Freeze at least 8 hours or overnight until completely firm.
9. Lift cake from pan using the plastic wrap. Peel away wrap, place on platter, and let sit 5 to 8 minutes before slicing. Cut with a warm knife for clean slices.
Notes
Use freeze-dried strawberries (not regular dried strawberries) for the best flavor and color.
Chill the mixing bowl and whisk 15 to 20 minutes before whipping for more stable peaks.
Smooth each layer before adding the next for the cleanest color bands.
For even sharper layers, freeze each one 20 to 30 minutes before adding the next.
Storage: Wrap tightly in plastic wrap, then store in an airtight container in the freezer. Keeps best quality for 2 to 4 weeks.
