Description

Toasted English muffins topped with pizza sauce, soft scrambled eggs, crispy bacon, and melted cheddar-mozzarella cheese. Ready in about 20 minutes and perfect for busy mornings, brunch, or breakfast-for-dinner.

6 English muffins, split in half

6 large eggs

2 tablespoons milk

1 tablespoon butter

6 strips bacon, cooked and crumbled

⅓ cup pizza sauce (about 1 tablespoon per muffin half)

1½ cups shredded cheddar-mozzarella cheese blend

Salt and pepper to taste

Optional: diced bell peppers, sliced green onions, red pepper flakes


Instructions

1. Preheat the oven to 375°F. Line a large baking sheet with parchment paper.

2. Split English muffins in half and place them cut-side up on the baking sheet. Toast in the oven for about 3 minutes until lightly golden and dry on top.

3. While the muffins toast, cook bacon in a skillet over medium heat until crispy. Transfer to a paper towel–lined plate and crumble when cool.

4. Whisk together eggs, milk, salt, and pepper. Melt butter in a nonstick skillet over medium-low heat. Add the egg mixture and stir gently, forming soft curds. Remove from heat while the eggs still look slightly wet.

5. Spread about 1 tablespoon of pizza sauce on each toasted muffin half. Divide scrambled eggs evenly among the muffins. Sprinkle crumbled bacon on top. Add shredded cheese generously over each.

6. Bake at 375°F for 8–10 minutes until the cheese is melted, bubbly, and lightly golden at the edges.

7. Cool 1–2 minutes before serving. Add optional toppings if desired.

Notes

Always toast the muffins first to prevent sogginess.

Undercook the eggs slightly on the stovetop — they finish cooking in the oven.

Freezer-friendly: flash freeze assembled pizzas, then store in freezer bags for up to 2 months. Bake from frozen at 375°F for 12–15 minutes.

Swap pizza sauce for cream cheese for a richer base.

Use turkey bacon and reduced-fat cheese for a lighter option.
