Description

1 cup milk

2 large eggs

⅓ cup pure maple syrup, plus more for serving

1 pound breakfast sausage

1 ¼ cups shredded sharp cheddar cheese

⅛ teaspoon salt

⅛ teaspoon black pepper


Instructions

1. Preheat oven to 400°F and grease a 12-cup muffin tin.

2. Brown the sausage in a skillet over medium heat until fully cooked; drain well.

3. Whisk together milk, eggs, and maple syrup in a large bowl.

4. Fold in the pancake mix until just combined.

5. Stir in the cooked sausage, cheddar, salt, and pepper.

6. Divide batter evenly among muffin cups, filling about two-thirds full.

7. Bake for 14 minutes, or until golden and a toothpick comes out clean.

8. Cool 5 minutes in the pan before transferring to a wire rack.

Notes
