Soft, chocolatey Halloween Whoopie Pies sandwiched with colorful vanilla buttercream — an easy, beginner-friendly treat perfect for spooky season parties.
Ingredients
½ cup unsalted butter, softened
½ cup brown sugar
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 ¼ cups all-purpose flour
½ cup cocoa powder
1 tsp baking soda
½ tsp salt
¾ cup buttermilk
1 cup unsalted butter, softened (for filling)
3 cups powdered sugar
2 tsp vanilla extract (for filling)
2–4 tbsp heavy cream
Gel food coloring, as desired
Instructions
1. Preheat oven to 350°F; line baking sheets with parchment paper.
2. Cream butter and both sugars together until light and fluffy, about 2-3 minutes.
3. Beat in eggs one at a time, then mix in vanilla extract until smooth.
4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
5. Alternate adding the dry ingredients and buttermilk to the butter mixture in three additions, starting and ending with dry ingredients. Mix just until combined.
6. Scoop batter into 24 even mounds onto prepared baking sheets, spacing a couple inches apart.
7. Bake for 10-12 minutes, until tops spring back lightly when touched.
8. Cool cookies completely on a wire rack before filling.
9. For the filling, beat butter until smooth, then add powdered sugar gradually, alternating with heavy cream, until light and fluffy.
10. Divide buttercream and tint with gel food coloring in desired Halloween colors.
11. Pipe or spread filling onto the flat side of one cookie, then top with a second cookie to form a sandwich. Repeat with remaining cookies.
Notes
Store assembled whoopie pies in an airtight container in the refrigerator for up to 5 days.
To freeze, place filled cookies in a single layer on a tray until solid, then transfer to a freezer-safe container for up to 2 months. Thaw overnight in the fridge before serving.
Use gel food coloring rather than liquid to avoid thinning the buttercream.
Let cookies cool completely before filling, or the buttercream will melt.
