Description
Ghost Mini Taco Pies are an easy, beginner-friendly Halloween dinner made with refrigerated pie crust, seasoned ground beef, and melty cheddar, topped with adorable ghost-shaped crust cutouts.
Ingredients
2 refrigerated pie crusts
1 pound ground beef
1 packet (or 2 tablespoons) taco seasoning
2/3 cup water
1 cup black beans, drained and rinsed (optional)
1 cup shredded cheddar cheese
1 egg, beaten
Salt and pepper, to taste
Instructions
1. Preheat oven to 400°F and grease a 12-cup muffin tin.
2. Brown ground beef in a skillet, 6–7 minutes; drain fat.
3. Stir in taco seasoning and water; simmer 4–5 minutes until thickened. Add black beans, salt, and pepper.
4. Cut 12 circles from one pie crust; press into muffin cups.
5. Fill cups with beef mixture; top with cheddar.
6. Cut 12 ghost shapes from the second pie crust.
7. Place a ghost shape on each pie; press edges gently.
8. Brush tops with beaten egg.
9. Bake 20–22 minutes until golden and bubbling.
10. Cool 5 minutes before removing from tin.
Notes
Filling can be made 2 days ahead.
Unbaked pies freeze well for up to 2 months.
