Description

A homemade Green Bean Casserole made with fresh green beans and a creamy, from-scratch sauce, topped with crispy fried onions — no canned soup required.


Ingredients

1 lb fresh green beans, trimmed

3 tbsp unsalted butter

8 oz sliced mushrooms

2 cloves garlic, minced

2 tbsp all-purpose flour

3/4 cup chicken or vegetable broth

1 1/4 cups half-and-half

Salt and pepper, to taste

1 1/2 cups crispy fried onions, divided


Instructions

1. Blanch green beans in boiling salted water 4-5 minutes; ice-bath to stop cooking.

2. Sauté mushrooms in butter until softened.

3. Add garlic, then flour; stir to coat.

4. Whisk in broth, then half-and-half; simmer until thickened.

5. Stir in green beans and half the onions.

6. Top with remaining onions; bake at 400°F for 15-20 minutes until bubbly.

Notes

For a make-ahead option, prep the beans and sauce separately up to a day in advance.

Freeze the bean-and-sauce mixture without onions for up to 3 months.

Add fresh crispy onions after thawing for the best crunch.
