Description
This Crockpot BBQ Chicken is sweet, smoky, and fall-apart tender, made with simple pantry ingredients and cooked low and slow in the slow cooker. It’s an easy, family-friendly dinner perfect for busy weeknights.
Ingredients
2 pounds boneless, skinless chicken breasts
1½ cups BBQ sauce
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper, to taste
1 tablespoon cornstarch
1 tablespoon water
Instructions
1. Lightly coat the slow cooker with nonstick spray. Arrange chicken breasts in a single layer on the bottom and season with salt and pepper.
2. In a small bowl, whisk together BBQ sauce, brown sugar, apple cider vinegar, garlic powder, and onion powder. Pour evenly over the chicken.
3. Cover and cook on low for 4 to 5 hours or high for 2 to 2½ hours, until chicken reaches an internal temperature of 165°F.
4. Remove chicken and shred with two forks.
5. Whisk cornstarch and water together, stir into the sauce in the slow cooker. Cook on high, uncovered or partially covered, for 15 to 20 minutes, stirring occasionally, until thickened.
6. Return shredded chicken to the slow cooker and toss to coat. Serve warm.
Notes
For a spicier version, add a pinch of cayenne or a spoonful of hot sauce.
Chicken thighs can be substituted for chicken breasts.
Do not use frozen chicken; thaw completely before cooking.
