Description
A warm, soupy one-pot rice dish simmered in seasoned chicken broth with sweet corn, diced jalapeño, and fresh lime. Serves as a flavorful side or light lunch.
Ingredients
1½ cups long-grain white rice
4 cups chicken broth
2 cups corn kernels (fresh or frozen)
2 medium jalapeños, seeded and diced
1 medium yellow onion, diced
3 cloves garlic, minced
2 tablespoons unsalted butter
1 tablespoon olive oil
1 teaspoon kosher salt
½ teaspoon ground cumin
½ teaspoon black pepper
Juice of 1 lime
¼ cup chopped fresh cilantro
¼ cup crumbled Cotija or shredded Monterey Jack cheese (optional garnish)
Instructions
1. Melt butter with olive oil in a large pot over medium-high heat. Add rice and stir constantly for 2–3 minutes until grains turn opaque and smell nutty.
2. Push rice to one side. Add onion, jalapeños, and garlic. Cook 2 minutes until onion softens. Add cumin, salt, and pepper. Stir everything together.
3. Pour in chicken broth and add corn kernels. Stir once and bring to a boil.
4. Reduce heat to low and partially cover, leaving a small gap for steam. Simmer 18–20 minutes until rice is tender and visible broth remains.
5. Remove from heat. Stir in lime juice and cilantro. Taste for salt. Ladle into bowls and garnish with cheese if desired.
Notes
The dish should be soupy, not dry. If too much broth has absorbed, stir in ¼ cup warm broth to loosen.
For milder heat, use 1 jalapeño or substitute a 4 oz can of diced green chiles.
For vegetarian, use vegetable broth.
Storage: Airtight container in the refrigerator for up to 4 days. Refrigerate within 2 hours.
Freezing: Freezer-safe containers for up to 2 months. Thaw overnight in the refrigerator.
Reheating: Stovetop over medium-low heat with a splash of broth. Reheat to 165 °F. Microwave in 90-second intervals, stirring between rounds.
