Description

Soft, buttery Coffee Cake Cookies filled with a warm cinnamon streusel center and topped with a light vanilla glaze — like a slice of coffee cake in cookie form.


Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1/3 cup brown sugar

1 large egg

1 large egg yolk

2 tsp vanilla extract

2 3/4 cups all-purpose flour

1 tsp cornstarch

1 1/2 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

3/4 tsp salt

1/2 cup all-purpose flour (for streusel)

1/4 cup brown sugar (for streusel)

1 tsp ground cinnamon (for streusel)

1/8 tsp salt (for streusel)

1/4 cup unsalted butter, melted and slightly cooled (for streusel)

1 cup powdered sugar (for glaze)

2 tbsp milk (for glaze)

1/2 tsp vanilla extract (for glaze)


Instructions

1. Make the streusel: in a small bowl, whisk together flour, brown sugar, cinnamon, and salt. Stir in melted butter until the mixture looks like damp, clumpy sand. Refrigerate while you make the dough.

2. In a large bowl or stand mixer, beat the butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

3. Mix in the egg, egg yolk, and vanilla until smooth and well combined.

4. In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda, cinnamon, and salt. Add to the wet mixture and stir just until no dry streaks remain.

5. Scoop the dough into balls, about 2 tablespoons each. Press a well into the center of each ball, then fill with about a teaspoon of the chilled streusel.

6. Chill the filled cookies in the fridge for 30 minutes.

7. Preheat the oven to 350°F. Bake cookies for 11-13 minutes, until the edges look set and lightly golden but the centers still look slightly soft.

8. Let the cookies rest on the baking sheet for a few minutes, then move to a wire rack. Once fully cool, whisk together the glaze ingredients and drizzle over the top.

Notes

Chilling the dough is essential for preventing spreading.

Cookies may look slightly underbaked when removed from the oven — this is normal, they firm up as they cool.

Store in an airtight container at room temperature for up to 4 days.

Freezes well for up to 3 months, baked or unbaked.
