Description
Creamy, herby cream cheese rolled up with crisp, colorful vegetables and shredded cheddar in soft flour tortillas, chilled and sliced into easy party-ready pinwheels.
Ingredients
8 oz cream cheese, softened
2–3 tbsp mayonnaise or sour cream
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried dill
1 cup shredded cheddar cheese
2 cups mixed vegetables, finely diced (bell pepper, carrot, broccoli, green onion)
5 medium (8-10 inch) flour tortillas
Instructions
1. Beat softened cream cheese with mayonnaise or sour cream until smooth; stir in garlic powder, onion powder, and dill.
2. Fold in shredded cheese and diced vegetables until evenly combined.
3. Spread about 1/3 cup of filling evenly over each tortilla, edge to edge.
4. Roll each tortilla tightly into a log.
5. Wrap individually in plastic wrap; refrigerate at least 1 hour, up to overnight.
6. Unwrap, trim uneven ends, and slice into 3/4-inch pinwheels. Serve cold.
Notes
Do not freeze – fresh vegetables release moisture and make the tortilla soggy.
Store in the fridge up to 3-4 days.
Chill for at least 1 hour before slicing for the cleanest pinwheels.
