Banana Pancake Bites

Description

Sliced bananas dipped in a fluffy cinnamon-vanilla pancake batter and pan-fried until golden. These easy Banana Pancake Bites are a fun, family-friendly breakfast ready in 25 minutes.


Ingredients

1½ cups all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

¼ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon salt

1¼ cups whole milk

3 tablespoons unsalted butter, melted

1 large egg

1½ teaspoons vanilla extract

3 large firm-ripe bananas, peeled and sliced ½ inch thick

Butter or cooking spray for the skillet


Instructions

1. Whisk flour, sugar, baking powder, baking soda, cinnamon, and salt in a medium bowl.

2. Add milk, melted butter, egg, and vanilla. Stir gently until just combined — a few small lumps are fine.

3. Let the batter rest for 10 minutes. Slice bananas while the batter rests.

4. Heat a nonstick skillet over medium-low. Lightly grease with butter or cooking spray.

5. Dip each banana slice into the batter with a fork, coat fully on both sides, let the excess drip off, and place onto the skillet. Leave about an inch of space between each bite.

6. Cook 2–3 minutes until the bottom is golden. Flip carefully with a thin spatula and cook 1–2 minutes on the second side.

7. Transfer finished bites to a 200°F oven to keep warm. Repeat with remaining banana slices.

8. Serve warm with maple syrup, powdered sugar, fresh berries, or your favorite pancake toppings.

Notes

Don’t use overripe bananas — they’ll fall apart when dipped and flipped. Firm, yellow bananas hold up best.

Don’t overmix the batter. A few small lumps are normal and help create a tender texture.

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.

Reheat in a 350°F oven for 8–10 minutes or in a lightly buttered skillet over medium-low heat.

For a dairy-free version, use oat milk, coconut oil, and a flax egg.
