Description

Soft tortillas filled with fluffy scrambled eggs, crispy bacon, and melty cheese, baked until warm and golden. An easy, family-friendly breakfast ready in about 40 minutes.


Ingredients

10 large eggs

1/4 cup whole milk

1 lb bacon

8 oz shredded Monterey Jack or cheddar cheese

8 soft corn or flour tortillas

Salt, pepper, and a pinch of chili powder, to taste

Optional toppings: avocado, salsa, fresh cilantro


Instructions

1. Preheat oven to 400°F. Bake bacon on a wire rack for 15-18 minutes until crisp; crumble once cooled.

2. Whisk eggs with milk, salt, and pepper. Scramble gently in a skillet until just set, about 3-4 minutes.

3. Grease a 9×13-inch baking dish and stand tortillas up along the edges.

4. Sprinkle cheese into each tortilla, then divide eggs and bacon evenly. Top with more cheese.

5. Bake 8-10 minutes until cheese is melted and edges are golden.

6. Serve warm with desired toppings.

Notes

Take eggs off the heat while still slightly soft to avoid rubbery texture after baking.

Use fresh tortillas for the best fold and structure.
