Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
1/2 teaspoon ground cinnamon
24 oz cream cheese, softened
3/4 cup granulated sugar
1/2 cup sour cream
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
3 large eggs
3 medium apples, peeled and thinly sliced
1/3 cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon lemon juice
1/2 cup all-purpose flour
1/2 cup old-fashioned oats
1/3 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 cup unsalted butter, cold and cubed
Instructions
1. Preheat oven to 325°F and prepare a 9-inch springform pan with parchment on the bottom.
2. Mix graham cracker crumbs, sugar, cinnamon, and melted butter; press into the pan and bake 10 minutes, then cool.
3. Beat cream cheese and sugar until completely smooth.
4. Mix in sour cream, flour, vanilla, and cinnamon, then add eggs one at a time on low speed.
5. Pour the filling over the cooled crust.
6. Toss sliced apples with brown sugar, cinnamon, and lemon juice; layer over the filling.
7. Combine flour, oats, brown sugar, and cinnamon; cut in cold butter until crumbly, then sprinkle over the apples.
8. Bake 55–60 minutes, until the edges are set and the center has a slight jiggle.
9. Cool at room temperature for about 1 hour, then chill at least 6 hours (overnight preferred) before slicing.
Notes
Use room-temperature cream cheese to avoid a lumpy filling.
A firmer baking apple holds its shape best and won’t turn mushy.
