These Air Fryer Chipotle Taquitos are ultra crispy, smoky, and packed with bold Chipotle-style flavor — without deep frying. Made with shredded chicken, melty cheese, and a hint of chipotle heat, they’re perfect for a quick lunch or easy weeknight meal.
Ingredients

2 cups cooked shredded chicken (rotisserie or leftover)

1 cup shredded Monterey Jack or Mexican-blend cheese

1–2 tablespoons chipotle peppers in adobo, finely minced
(or 1 teaspoon chipotle powder for mild heat) -
1 tablespoon fresh lime juice

½ teaspoon garlic powder

½ teaspoon ground cumin

Salt and black pepper, to taste

10–12 small corn tortillas (or flour tortillas)

Olive oil spray
Instructions

In a bowl, combine the shredded chicken, cheese, chipotle, lime juice, garlic powder, cumin, salt, and pepper. Mix until evenly combined.

Warm the tortillas (microwave, skillet, or oven) until soft and flexible.

Add about 2 tablespoons of filling to each tortilla and roll tightly.

Place taquitos seam-side down in a single layer in the air fryer basket.

Lightly spray the outside of the taquitos with oil.

Air fry at 400°F (200°C) for 6–8 minutes, flipping halfway, until golden and crispy.

Remove and serve hot with your favorite dipping sauce.

Corn tortillas give the crispiest results; flour tortillas are easier to roll.

Don’t overfill — too much filling prevents crisping.
