1/2 cup cinnamon sugar (1/2 cup sugar + 2 teaspoons ground cinnamon)

Instructions

Prepare the Filling: In a medium bowl, beat cream cheese, sugar, vanilla, and lemon juice (if using) until smooth and creamy.

Fill and Roll: Lay out tortillas. Divide cheesecake filling evenly onto the lower third of each tortilla. Fold in the sides, then roll up tightly burrito-style. Seal the edge with a little water.

Heat Oil: In a deep pan, heat 1–2 inches of vegetable oil to 350°F (175°C).

Fry: Place rolled tortillas seam-side down into hot oil. Fry 2–3 minutes per side until golden brown and crisp. Remove and drain on paper towels.

Coat with Cinnamon Sugar: While still warm, roll each fried roll in cinnamon sugar to coat completely.

Serve: Slice each xango on the diagonal if desired. Drizzle with caramel and chocolate sauce, add whipped cream or ice cream, and garnish with berries.
