  • 2 slices thick bread (brioche, sourdough, or gluten-free, about 1 inch thick)
  • ½ cup plain Greek yogurt (or coconut/plant-based yogurt)
  • 1 large egg (or flax egg for vegan)
  • 12 tsp honey or maple syrup (optional)
  • ½ tsp vanilla extract (optional)
  • Zest of ½ lime or lemon (optional)
  • Pinch of cinnamon or nutmeg (optional)
  • ½ cup assorted tropical fruits (mango, pineapple, kiwi, passionfruit, banana, papaya), sliced or diced
  • 1 tbsp shredded coconut (optional)
  • Honey, maple syrup, or lime juice for drizzling (optional)

Instructions

  1. Preheat oven or air fryer:
    Preheat oven to 350°F (175°C) or air fryer to 350°F (180°C).
  2. Prepare the bread:
    Press the center of each slice to create a well for the custard, being careful not to tear the bread.
  3. Make the custard:
    In a bowl, whisk together yogurt, egg, honey or maple syrup, vanilla, zest, and cinnamon/nutmeg until smooth.
  4. Assemble:
    Spoon the custard mixture evenly into the wells of the bread slices. Arrange tropical fruit on top and sprinkle with coconut if using.
  5. Bake or air fry:
    Place bread on a lined baking sheet (or in air fryer basket). Bake 10–15 minutes, or air fry 5–8 minutes, until custard is set and edges are golden.
  6. Finish & serve:
    Drizzle with honey, maple syrup, or lime juice. Add extra fruit or coconut if desired. Serve warm.

Notes

  • Use slightly stale bread for best results; it holds the custard better.

  • Substitute flax egg and plant-based yogurt for a vegan version.

  • Switch up the fruit to match the season or your preferences.

  • For extra crunch, lightly toast the bread before adding the custard.
