  • 3 cups mashed potatoes (leftover or freshly made)

  • 1 large egg

  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)

  • Salt, to taste

  • Black pepper, to taste

For Filling (choose one or mix)

  • Shredded cheese

  • Cooked bacon bits

  • Cooked chicken (chopped)

  • Sautéed mushrooms or spinach (well-drained)


Instructions

  1. Preheat oven to 425°F (220°C) and lightly grease a muffin tin.

  2. In a large bowl, mix mashed potatoes, egg, shredded cheese, salt, and pepper until well combined.

  3. Scoop the mixture into the muffin tin and press firmly to form nest shapes, leaving a well in the center.
