Ingredients
– 2 cups fresh strawberries, hulled (about 300g)
– 1 cup plain Greek yogurt (full-fat for creamiest texture)
– 1/4 cup honey (adjust to taste)
– 1 teaspoon vanilla extract (optional but delicious)
– 1/2 cup granola (plus extra if you want more crunch)
Instructions
1. Blend strawberries, Greek yogurt, honey, and vanilla until completely smooth.
2. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
3. Sprinkle granola over the surface and gently press it in so it sticks once frozen.
4. Insert popsicle sticks and freeze for at least 4 hours, or until fully solid.
5. To release, run the molds under warm water for 20–40 seconds, then gently pull the pops out.
6. Serve immediately, or transfer pops to an airtight container for longer storage.
