For the Braised Beef

  • 1.5 lbs chuck roast, cut into large chunks

  • 1 tbsp neutral oil (canola or avocado)

  • 1 medium onion, sliced

  • 4 garlic cloves, minced

  • 1 tbsp fresh ginger, grated

  • 3 cups beef broth

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar (optional)

For the Spicy Miso Broth

  • 3 tbsp white or red miso paste

  • 12 tbsp chili paste (gochujang, sambal, or chili garlic sauce)

  • 1 tbsp soy sauce

  • 1 tsp sesame oil

  • 1 cup additional broth (as needed for consistency)

For the Noodles & Toppings

  • 23 packs ramen noodles (fresh or dried)

  • Soft-boiled eggs

  • Sliced scallions

  • Corn

  • Toasted sesame seeds

  • Chili oil or chili crisp

  • Nori strips (optional)


Instructions

1. Brown the Beef

Heat oil in a Dutch oven. Add beef chunks and brown on all sides until deeply caramelized. Remove and set aside.

2. Build the Aromatics

In the same pot, sauté onions, garlic, and ginger for 2–3 minutes until fragrant.

3. Start the Braise

Add the beef back in, pour in broth and soy sauce, and bring to a simmer. Cover and cook gently for 1.5–2 hours until fork-tender.

4. Make the Spicy Miso Tare

In a small bowl, mix miso paste, chili paste, soy sauce, and sesame oil. Set aside.

5. Add the Tare

Once beef is tender, stir in the miso mixture. Taste and adjust broth with extra stock if needed.

6. Cook the Noodles

Boil ramen noodles separately according to package instructions. Drain and set aside.

7. Assemble the Bowls

Place noodles in each bowl, ladle over the spicy miso broth, add braised beef, and finish with your favorite toppings.

Notes

  • Add miso at the end of cooking to prevent bitterness.

  • Adjust spice level by adding more chili paste or chili oil.

  • Beef tastes even better the next day.
