This Spicy Miso Braised Beef Ramen is cozy, rich, and full of deep umami flavor. Tender braised beef simmers in a spicy miso broth, noodles stay perfectly chewy, and every topping brings the bowl to life. Warm, bold, and restaurant-worthy — right from your home kitchen.
Ingredients
For the Braised Beef

1.5 lbs chuck roast, cut into large chunks

1 tbsp neutral oil (canola or avocado)

1 medium onion, sliced

4 garlic cloves, minced

1 tbsp fresh ginger, grated

3 cups beef broth

2 tbsp soy sauce

1 tbsp rice vinegar (optional)
For the Spicy Miso Broth

3 tbsp white or red miso paste

1–2 tbsp chili paste (gochujang, sambal, or chili garlic sauce)

1 tbsp soy sauce
-
1 tsp sesame oil
-
1 cup additional broth (as needed for consistency)
For the Noodles & Toppings

2–3 packs ramen noodles (fresh or dried)

Soft-boiled eggs

Sliced scallions

Corn

Toasted sesame seeds

Chili oil or chili crisp

Nori strips (optional)
Instructions
Heat oil in a Dutch oven. Add beef chunks and brown on all sides until deeply caramelized. Remove and set aside.
In the same pot, sauté onions, garlic, and ginger for 2–3 minutes until fragrant.
Add the beef back in, pour in broth and soy sauce, and bring to a simmer. Cover and cook gently for 1.5–2 hours until fork-tender.
In a small bowl, mix miso paste, chili paste, soy sauce, and sesame oil. Set aside.
Once beef is tender, stir in the miso mixture. Taste and adjust broth with extra stock if needed.
Boil ramen noodles separately according to package instructions. Drain and set aside.
Place noodles in each bowl, ladle over the spicy miso broth, add braised beef, and finish with your favorite toppings.
