Description

A hearty, tomato-based Southern classic loaded with shredded pork, smoked chicken, and tender vegetables, this slow cooker Brunswick stew is the ultimate comfort meal for busy weeknights or cozy weekends. Toss it in the crockpot and let tradition simmer to perfection.


Ingredients

  • 2 cups shredded cooked pork (leftover BBQ pork works great)

  • 2 cups shredded cooked chicken (smoked or rotisserie)

  • 1 (14.5 oz) can crushed tomatoes

  • 1 cup tomato sauce

  • 1/2 cup BBQ sauce (your favorite style)

  • 1/2 cup chicken broth (low sodium)

  • 1 cup frozen corn

  • 1 cup lima beans (frozen or canned)

  • 1 small onion, chopped

  • 1 tbsp Worcestershire sauce

  • 1 tsp apple cider vinegar

  • 1/2 tsp garlic powder

  • 1/4 tsp black pepper

  • Optional: 1 tsp liquid smoke for a BBQ kick

  • Salt to taste


Instructions

  1. Add all ingredients to your slow cooker in the order listed.

  2. Stir gently to combine without breaking up the meat too much.

  3. Cover and cook on Low for 6–7 hours or High for 3–4 hours.

  4. Taste and adjust seasoning (add more salt, pepper, or vinegar if needed).

  5. Stir before serving. Serve warm with cornbread, biscuits, or over rice.

  6. Optional: Add a splash of BBQ sauce on top before serving.

Notes

  • You can use only chicken or only pork if preferred.

  • Substitute lima beans with butter beans, navy beans, or skip if you dislike beans.

  • Store leftovers in the fridge for 4 days or freeze for up to 3 months.

  • For thicker stew, remove lid for last 30 minutes of cooking or mash some of the beans.

  • Want it spicier? Add hot sauce or cayenne.
