Description

This Sheet Pan Cheeseburger Quesadilla is a crispy, oven-baked dinner made with seasoned ground beef, melty cheese, and soft flour tortillas. Everything cooks together on one pan—no flipping, no mess—making it a cozy, crowd-pleasing meal that’s perfect for busy nights.


Ingredients

  • 1 lb ground beef (80/20 or 85/15)

  • 8 large flour tortillas

  • 8 slices American cheese

  • 1½ cups shredded cheddar cheese

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ cup chopped pickles (optional)

  • ¼ cup finely chopped onions (optional)

  • Cooking spray or parchment paper

Optional for serving: burger sauce or ketchup & mustard


Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a large sheet pan or line it with parchment paper.

  2. In a skillet over medium heat, cook the ground beef until browned and fully cooked. Season with salt, pepper, garlic powder, and onion powder. Drain excess grease and let cool slightly.

  3. Place tortillas on the sheet pan. Sprinkle a thin layer of cheese directly onto each tortilla.

  4. Evenly distribute the cooked ground beef over the cheese. Add pickles and onions if using.

  5. Top with remaining cheese and cover with another tortilla, pressing gently.

  6. Bake for 12–15 minutes, until the tortillas are golden and the cheese is melted.

  7. Broil for 1–2 minutes if needed for extra crispiness (watch closely).

  8. Let rest for 3–5 minutes, then slice and serve warm.

Notes

  • Letting the beef cool slightly before assembling helps prevent soggy tortillas.

  • For the crispiest results, serve sauce on the side instead of inside the quesadillas.

  • A blend of American and cheddar cheese gives the best melt and flavor.
