Ingredients
-
1 lb ground beef (80/20 or 85/15)
-
8 large flour tortillas
-
8 slices American cheese
-
1½ cups shredded cheddar cheese
-
1 tsp salt
-
½ tsp black pepper
-
½ tsp garlic powder
-
½ tsp onion powder
-
½ cup chopped pickles (optional)
-
¼ cup finely chopped onions (optional)
-
Cooking spray or parchment paper
Optional for serving: burger sauce or ketchup & mustard
Instructions
-
Preheat the oven to 400°F (200°C). Lightly grease a large sheet pan or line it with parchment paper.
-
In a skillet over medium heat, cook the ground beef until browned and fully cooked. Season with salt, pepper, garlic powder, and onion powder. Drain excess grease and let cool slightly.
-
Place tortillas on the sheet pan. Sprinkle a thin layer of cheese directly onto each tortilla.
-
Evenly distribute the cooked ground beef over the cheese. Add pickles and onions if using.
-
Top with remaining cheese and cover with another tortilla, pressing gently.
-
Bake for 12–15 minutes, until the tortillas are golden and the cheese is melted.
-
Broil for 1–2 minutes if needed for extra crispiness (watch closely).
-
Let rest for 3–5 minutes, then slice and serve warm.
Notes
-
Letting the beef cool slightly before assembling helps prevent soggy tortillas.
-
For the crispiest results, serve sauce on the side instead of inside the quesadillas.
-
A blend of American and cheddar cheese gives the best melt and flavor.
