Ingredients
-
2 cups shredded unsweetened coconut
-
½ cup sweetened condensed milk (or vegan condensed milk alternative)
-
1 tbsp coconut oil (optional, for texture)
-
½ tsp vanilla extract
-
¼ tsp sea salt
-
½ cup dark chocolate chips (optional, for dipping)
Instructions
-
In a medium bowl, combine shredded coconut, condensed milk, vanilla, salt, and coconut oil. Mix until fully combined.
-
Chill mixture for 10–15 minutes in the refrigerator to firm up.
-
Roll into 1-inch balls using your hands or a small cookie scoop.
-
(Optional) Melt chocolate chips and dip the coconut balls halfway or fully. Let excess drip off.
-
Place rolled balls on a parchment-lined tray. Chill for another 15 minutes until set.
-
Store in an airtight container in the fridge or freezer.
Notes
-
For a vegan version, use vegan condensed milk and dairy-free chocolate.
-
Add-ins like chia seeds, protein powder, or orange zest can create delicious variations.
-
If the mixture is too sticky, add more shredded coconut. Too dry? Add a touch more condensed milk or coconut oil.
