Description

These Matcha S’mores Brownies are the ultimate East-meets-West dessert: a buttery graham cracker base, fudgy green tea brownie center, and gooey marshmallow topping. The perfect mashup of nostalgic campfire vibes and trendy matcha flavor — ready to impress at your next gathering or late-night snack run.

Ingredients

Scale

Graham Cracker Crust:

  • 1 ½ cups graham cracker crumbs

  • 6 tbsp unsalted butter, melted

  • 2 tbsp sugar

  • Pinch of salt

Matcha Brownie Layer:

  • ½ cup unsalted butter, melted

  • ¾ cup white sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 2 tbsp culinary-grade matcha powder

  • ½ cup all-purpose flour

  • ½ tsp baking powder

  • ¼ tsp salt

  • Optional: ½ cup white chocolate chips

Marshmallow Topping:

  • 1 ½ cups mini marshmallows or 1 cup marshmallow fluff

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

  2. Make the crust: Mix graham cracker crumbs, melted butter, sugar, and salt. Press evenly into bottom of pan. Bake for 8 minutes, then let cool slightly.

  3. Prepare brownie layer: In a bowl, whisk melted butter and sugar. Add eggs and vanilla. Mix in matcha powder until smooth. Add flour, baking powder, and salt. Fold in white chocolate if using.

  4. Assemble: Pour matcha brownie batter over crust. Bake for 20–25 minutes until set (do not overbake).

  5. Top with marshmallows: Remove from oven, add mini marshmallows or spread fluff. Broil for 1–2 minutes until golden — watch carefully!

  6. Let cool completely before slicing into squares.

Notes

  • For brighter green color, use high-quality culinary-grade matcha and avoid overbaking.

  • Marshmallow fluff gives a gooier top, while mini marshmallows offer that classic toasted look.

  • You can substitute graham crackers with digestive biscuits or almond flour crust for a twist.
