Description
These Lemon Brownies are soft, chewy, and bursting with real lemon flavor. Think brownie texture, but with a bright citrus twist — finished with a simple lemon glaze that sets into the prettiest sweet-tart layer.
Ingredients
– 1 cup unsalted butter, melted
– 2 cups granulated sugar
– 4 large eggs (room temperature)
– 1 tablespoon vanilla extract
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– Zest of 2 lemons
– Juice of 2 lemons
– 1 cup powdered sugar (for glaze)
– 2 tablespoons lemon juice (for glaze)
Instructions
1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch pan with parchment paper.
2. Whisk melted butter and sugar until glossy and well combined.
3. Add eggs one at a time, whisking after each, then stir in vanilla.
4. In a separate bowl, whisk flour, baking powder, and salt.
5. Add dry ingredients to wet ingredients and mix just until no dry streaks remain.
6. Fold in lemon zest and lemon juice gently (don’t overmix).
7. Spread batter evenly into the prepared pan.
8. Bake 20–25 minutes, until edges are set and a toothpick comes out clean or with a few moist crumbs.
9. Cool completely before glazing (this helps the glaze set nicely).
10. Whisk powdered sugar and lemon juice until smooth, then spread over cooled brownies. Slice and serve.
Notes
– For the brightest flavor, use fresh lemon juice and zest (zest your lemons before juicing).
– Don’t overmix after adding flour — it keeps the brownies soft and chewy.
– Storage: keep airtight at room temp 2–3 days, refrigerate up to 5 days, or freeze up to 3 months.
