Ingredients
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1/4 cup light brown sugar (packed)
1 large egg (room temperature)
1 teaspoon vanilla extract
Zest of 1 large lemon
2 tablespoons fresh lemon juice
1 cup blueberries (fresh, or frozen—use straight from freezer)
Powdered sugar for dusting (optional)
Instructions
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
3. In a large bowl, beat the softened butter with the granulated sugar and brown sugar until light and fluffy, about 2–3 minutes.
4. Add the egg and vanilla extract and mix until smooth. Stir in the lemon zest and lemon juice.
5. Add the dry ingredients and mix just until combined (don’t overmix).
6. Gently fold in the blueberries with a spatula.
7. Scoop 1 tablespoon portions of dough onto the baking sheet, spacing cookies about 2 inches apart.
8. Bake for 10–12 minutes, until the edges are lightly golden and the centers look set but still soft.
9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
10. Dust with powdered sugar if desired, then serve.
Notes
Fresh blueberries give the cleanest look, but frozen blueberries work great—use them frozen (do not thaw) to avoid excess moisture and purple dough.
If your kitchen is warm or the dough feels sticky, chill the dough for 20–30 minutes for thicker cookies.
Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
