These Keto Crispy Reuben Roll-Ups are a low-carb twist on the classic Reuben—crispy on the outside, warm and melty inside. A cheesy almond-flour shell wraps up savory corned beef, tangy sauerkraut, Swiss, and creamy Thousand Island for a cozy, deli-style bite without the bread.
Ingredients
CHEESE SHELL
2 cups shredded mozzarella
1 cup shredded cheddar
1/2 cup almond flour
FILLING
1 1/2 cups diced corned beef (cooked or deli corned beef, chopped)
1 cup sauerkraut, very well drained and squeezed dry
4 slices Swiss cheese, torn into pieces (or 1 cup shredded Swiss)
1/3 cup Thousand Island dressing
1 teaspoon Dijon mustard
OPTIONAL (FOR EXTRA DELI FLAVOR)
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a bowl, mix mozzarella, cheddar, and almond flour until evenly combined.
3. Scoop 2–3 tablespoons of the cheese mixture onto the baking sheet and flatten into thin circles (about 4 inches wide). Leave space between circles.
4. Bake for 8–10 minutes, until the edges are golden and the centers are set. Let cool 2–3 minutes so they firm up but stay flexible.
5. In another bowl, mix corned beef, sauerkraut, Thousand Island dressing, and Dijon. (If using Swiss slices, tear and fold them into the filling.)
6. Place a heaping tablespoon of filling in the center of each cheese round.
7. Carefully roll each one up, seam-side down on the baking sheet.
8. Bake again for 15–20 minutes, until deeply golden, crisp, and heated through.
9. Rest 3–5 minutes before serving so the cheese shell sets and stays crisp.
Notes
Sauerkraut tip: squeeze it very dry—extra moisture is the #1 reason shells soften.
For best crispiness, reheat leftovers in the oven or air fryer instead of the microwave.
