Description

These Jam Crumb Bars are buttery, fruity, and melt-in-your-mouth delicious. With a soft shortbread-style base, a thick layer of sweet jam, and a golden crumb topping, they come together with simple pantry ingredients and zero fuss. For the Crumb Mixture (Base + Topping):

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1 tsp baking powder

  • ¼ tsp salt

  • 1 cup cold unsalted butter, cubed

For the Jam Layer:

  • ¾ to 1 cup thick jam (raspberry, strawberry, mixed berry, or your favorite)


Instructions

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.

  2. Make the crumb mixture:
    In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold cubed butter and cut it into the dry mixture using your fingers, a pastry cutter, or a fork until it resembles coarse sand with pea-sized crumbs.

  3. Press the base:
    Pour a little more than half of the crumb mixture into the pan. Gently press it down into an even layer—firm enough to hold together but not packed too tightly.

  4. Add the jam:
    Spoon the jam over the base and spread gently. Make sure the jam layer reaches all corners for even flavor.

  5. Add the crumble topping:
    Sprinkle the remaining crumb mixture on top. Leave some bigger chunks for a bakery-style crumb.

  6. Bake:
    Bake for 30–35 minutes, or until the top is lightly golden and the jam is bubbling at the edges.

  7. Cool & slice:
    Let the bars cool completely in the pan before lifting them out and cutting into squares.

Notes

  • Use thick jam for the best structure. Runny jams may seep into the base.

  • For easier spreading, warm the jam for 10 seconds in the microwave.

  • Add a pinch of cinnamon, lemon zest, or almond extract for extra flavor.

  • For oat crumb bars, swap ½ cup of flour with rolled oats.

  • Bars slice cleanest when fully cooled — or chilled for 20 minutes.
