Description

These Ground Beef Hand Pies are flaky, savory, and incredibly easy to make. Golden pastry filled with a rich beef mixture, sealed into perfect handheld pockets — ideal for weeknight dinners, lunchboxes, or freezer meal prep. Use puff pastry, pie crust, or biscuit dough for your favorite texture!

For the Beef Filling

  • 1 lb (450g) ground beef

  • 1 small onion, finely diced

  • 2 garlic cloves, minced

  • 2 tbsp tomato paste

  • 1 tbsp Worcestershire sauce

  • ½ cup beef broth

  • 1 tsp paprika

  • ½ tsp dried thyme

  • ½ tsp salt (adjust to taste)

  • ¼ tsp black pepper

  • ½ cup shredded cheddar (optional)

  • ½ cup frozen peas or corn (optional)

For the Crust

(Choose one)

  • 2 sheets puff pastry, thawed
    OR

  • 2 store-bought pie crusts
    OR

  • 1 can refrigerated biscuit dough (flattened into circles)

Egg Wash

  • 1 egg, beaten with 1 tbsp water


Instructions

Make the Beef Filling

  1. Heat a skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.

  2. Add onion and garlic; cook 2–3 minutes until soft.

  3. Stir in tomato paste, Worcestershire sauce, paprika, thyme, salt, and pepper.

  4. Add beef broth and simmer 3–5 minutes until thickened.

  5. Remove from heat and let the filling cool completely (important for a crisp crust).

  6. Stir in cheese or veggies if using.

2. Prepare the Dough

  1. Roll out puff pastry or pie crust slightly to smooth.

  2. Cut into rectangles or circles, about 4–5 inches wide.

3. Assemble the Hand Pies

  1. Add 2–3 tablespoons of cooled beef filling to each dough piece.

  2. Fold over to form a pocket.

  3. Seal edges by pressing with a fork.

  4. Cut a small vent slit on top.

  5. Brush tops with egg wash.

4. Bake

Oven:

  • Preheat to 400°F (200°C).

  • Line a baking sheet with parchment.

  • Bake 18–22 minutes, or until golden brown.

Air Fryer:

  • Preheat to 375°F (190°C).

  • Air fry 10–12 minutes, checking halfway.

  • Cooling the filling prevents soggy crusts.

  • Don’t overfill — it causes leaking.

  • Add cheese for a cheeseburger-style variation.
