Description

This fruit quesadilla is crispy on the outside, gooey in the middle, and packed with warm, juicy fruit. Itโ€™s a quick sweet snack (or brunchy dessert) made with simple ingredients you probably already have.


Ingredients

2 (8-inch) flour tortillas

1 cup shredded mozzarella (or Monterey Jack)

1 medium banana, thinly sliced

1/2 cup strawberries, thinly sliced

1/2 cup blueberries

1 tablespoon honey (optional)

1 teaspoon butter (or neutral oil), for the pan


Instructions

1. Heat a non-stick skillet over medium heat.

2. Place 1 tortilla in the skillet and sprinkle about half the cheese over the surface.

3. Add the banana, strawberries, and blueberries in an even layer (donโ€™t pile it too high).

4. Drizzle with honey if using.

5. Sprinkle the remaining cheese over the fruit, then top with the second tortilla.

6. Cook 2โ€“3 minutes, until the bottom is golden and the cheese starts to melt.

7. Flip carefully and cook 2โ€“3 minutes more, until the second side is golden and the cheese is fully melted.

8. Rest for 1 minute, then slice into wedges and serve warm.
