This fruit quesadilla is crispy on the outside, gooey in the middle, and packed with warm, juicy fruit. Itโs a quick sweet snack (or brunchy dessert) made with simple ingredients you probably already have.
Ingredients
2 (8-inch) flour tortillas
1 cup shredded mozzarella (or Monterey Jack)
1 medium banana, thinly sliced
1/2 cup strawberries, thinly sliced
1/2 cup blueberries
1 tablespoon honey (optional)
1 teaspoon butter (or neutral oil), for the pan
Instructions
1. Heat a non-stick skillet over medium heat.
2. Place 1 tortilla in the skillet and sprinkle about half the cheese over the surface.
3. Add the banana, strawberries, and blueberries in an even layer (donโt pile it too high).
4. Drizzle with honey if using.
5. Sprinkle the remaining cheese over the fruit, then top with the second tortilla.
6. Cook 2โ3 minutes, until the bottom is golden and the cheese starts to melt.
7. Flip carefully and cook 2โ3 minutes more, until the second side is golden and the cheese is fully melted.
8. Rest for 1 minute, then slice into wedges and serve warm.
