Description
Dandy-Do Cookies are classic, old-fashioned no-bake cookies made with crackers coated in a smooth chocolate and peanut butter mixture. Sweet, slightly salty, and wonderfully nostalgic, these easy cookies are perfect for sharing, gifting, or enjoying straight from the tray.
Ingredients
-
24 crackers (Ritz, saltines, or similar)
-
1 cup chocolate chips or chopped chocolate
-
½ cup creamy peanut butter
-
¼ cup unsalted butter
-
¾ cup granulated sugar
-
¼ cup milk
-
1 teaspoon vanilla extract (optional)
Instructions
-
Line a baking sheet with parchment paper and set aside.
-
In a medium saucepan over low heat, add the butter, peanut butter, sugar, and milk. Stir gently until fully melted and smooth.
-
Remove the saucepan from heat. Add the chocolate and vanilla extract, stirring until the mixture is glossy and completely melted.
-
Dip each cracker into the chocolate mixture, coating it fully.
-
Lift with a fork, let excess chocolate drip off, and place on the prepared baking sheet.
-
Let the cookies sit at room temperature until the chocolate coating is fully set.
Notes
-
Keep the heat low to prevent grainy or separated chocolate.
-
Ritz crackers give a sweeter, buttery flavor; saltines add more salty contrast.
-
For a peanut-free version, substitute sunflower seed butter.
