Description

Dandy-Do Cookies are classic, old-fashioned no-bake cookies made with crackers coated in a smooth chocolate and peanut butter mixture. Sweet, slightly salty, and wonderfully nostalgic, these easy cookies are perfect for sharing, gifting, or enjoying straight from the tray.


Ingredients

  • 24 crackers (Ritz, saltines, or similar)

  • 1 cup chocolate chips or chopped chocolate

  • ½ cup creamy peanut butter

  • ¼ cup unsalted butter

  • ¾ cup granulated sugar

  • ¼ cup milk

  • 1 teaspoon vanilla extract (optional)


Instructions

  1. Line a baking sheet with parchment paper and set aside.

  2. In a medium saucepan over low heat, add the butter, peanut butter, sugar, and milk. Stir gently until fully melted and smooth.

  3. Remove the saucepan from heat. Add the chocolate and vanilla extract, stirring until the mixture is glossy and completely melted.

  4. Dip each cracker into the chocolate mixture, coating it fully.

  5. Lift with a fork, let excess chocolate drip off, and place on the prepared baking sheet.

  6. Let the cookies sit at room temperature until the chocolate coating is fully set.

Notes

  • Keep the heat low to prevent grainy or separated chocolate.

  • Ritz crackers give a sweeter, buttery flavor; saltines add more salty contrast.

  • For a peanut-free version, substitute sunflower seed butter.
