- 3 pounds Yukon Gold or red potatoes, cut into chunks
- 6 tablespoons unsalted butter, sliced
- 1 ounce onion soup mix (1 packet, or homemade equivalent)
- 4 cloves garlic, minced
- 1 cup low-sodium beef broth
- Freshly ground black pepper, to taste
- Salt, to taste (optional)
- 2 tablespoons fresh parsley or chives, chopped (for garnish)
- Optional additions: 2 carrots, peeled and sliced; 1 parsnip, peeled and sliced; 1 cup sweet potato, diced
Instructions
- Prep Ingredients: Trim excess fat from the beef and cut into cubes if needed. Wash and cut potatoes into even chunks.
- Layer in Crockpot: Place potatoes at the bottom of the slow cooker. Add beef on top of the potatoes.
- Season: Sprinkle onion soup mix evenly over the beef and potatoes. Add minced garlic and dot slices of butter on top.
- Add Broth: Pour beef broth evenly over all the ingredients.
- Optional Add-ins: If using, add carrots, parsnips, or sweet potatoes at this stage.
- Cook: Cover and cook on LOW for 6–8 hours (recommended for most tender results), or on HIGH for 3–4 hours. Avoid lifting the lid during cooking.
- Finish: Gently stir before serving. Taste and adjust salt and pepper if needed. Garnish with fresh parsley or chives.
- Serve: Enjoy as-is or with your favorite side dishes.
Notes
- For deeper flavor, sear beef cubes in a hot skillet before adding to the crockpot (optional).
- To thicken the sauce, mash a few potatoes into the broth or add a cornstarch slurry during the last 30 minutes of cooking.
