Description

Crockpot steak and potatoes is a classic one-pot comfort meal, featuring tender beef and flavorful potatoes slow-cooked in a savory broth. This easy, family-friendly recipe is perfect for busy weeknights, cozy Sunday dinners, or any time you want a hearty, hands-off meal that everyone will love.


Ingredients

  • 2 pounds beef stew meat (or chuck roast, cut into 1-inch cubes)
  • 3 pounds Yukon Gold or red potatoes, cut into chunks
  • 6 tablespoons unsalted butter, sliced
  • 1 ounce onion soup mix (1 packet, or homemade equivalent)
  • 4 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • Freshly ground black pepper, to taste
  • Salt, to taste (optional)
  • 2 tablespoons fresh parsley or chives, chopped (for garnish)
  • Optional additions: 2 carrots, peeled and sliced; 1 parsnip, peeled and sliced; 1 cup sweet potato, diced

Instructions

  1. Prep Ingredients: Trim excess fat from the beef and cut into cubes if needed. Wash and cut potatoes into even chunks.
  2. Layer in Crockpot: Place potatoes at the bottom of the slow cooker. Add beef on top of the potatoes.
  3. Season: Sprinkle onion soup mix evenly over the beef and potatoes. Add minced garlic and dot slices of butter on top.
  4. Add Broth: Pour beef broth evenly over all the ingredients.
  5. Optional Add-ins: If using, add carrots, parsnips, or sweet potatoes at this stage.
  6. Cook: Cover and cook on LOW for 6–8 hours (recommended for most tender results), or on HIGH for 3–4 hours. Avoid lifting the lid during cooking.
  7. Finish: Gently stir before serving. Taste and adjust salt and pepper if needed. Garnish with fresh parsley or chives.
  8. Serve: Enjoy as-is or with your favorite side dishes.

Notes

  • For deeper flavor, sear beef cubes in a hot skillet before adding to the crockpot (optional).
  • To thicken the sauce, mash a few potatoes into the broth or add a cornstarch slurry during the last 30 minutes of cooking.
  • Sweet potatoes, carrots, or other root vegetables can be added for extra nutrition and variety.
