Ingredients

1 lb (450 g) spinach (fresh or frozen, thawed and well-squeezed)

1 tbsp butter or olive oil

2 cloves garlic, minced

4 oz (115 g) cream cheese, softened

½ cup (120 ml) heavy cream or half-and-half

¾ cup (90 g) feta cheese, crumbled

¼ tsp black pepper

Pinch of nutmeg (optional)

Salt, to taste (add only after feta)

Optional: chili flakes or fresh herbs (dill or oregano)
Instructions

Prepare the spinach:
If using fresh spinach, wilt it in a pan until just collapsed, then press out excess moisture. If using frozen spinach, thaw completely and squeeze dry. -
Build the base:
Heat butter or olive oil in a skillet over medium-low heat. Add garlic and cook for 30 seconds until fragrant. -
Create the creamy sauce:
Stir in cream cheese and heavy cream. Cook gently, stirring, until smooth and creamy. -
Add spinach:
Fold the prepared spinach into the sauce and stir until evenly coated and thick. -
Finish with feta:
Remove the pan from heat. Add feta cheese and stir gently until just melted. Season with black pepper, nutmeg (if using), and salt only if needed. -
Serve warm:
Spoon into a serving dish or enjoy straight from the pan.
