Description

This Creamed Spinach with Feta Cheese is rich, creamy, and never watery. Made with tender spinach, garlic, a smooth creamy base, and tangy feta added at just the right moment, it’s a cozy yet balanced side dish that works equally well as a dinner side or a warm dip.


Ingredients

  • 1 lb (450 g) spinach (fresh or frozen, thawed and well-squeezed)

  • 1 tbsp butter or olive oil

  • 2 cloves garlic, minced

  • 4 oz (115 g) cream cheese, softened

  • ½ cup (120 ml) heavy cream or half-and-half

  • ¾ cup (90 g) feta cheese, crumbled

  • ¼ tsp black pepper

  • Pinch of nutmeg (optional)

  • Salt, to taste (add only after feta)

  • Optional: chili flakes or fresh herbs (dill or oregano)


Instructions

  1. Prepare the spinach:
    If using fresh spinach, wilt it in a pan until just collapsed, then press out excess moisture. If using frozen spinach, thaw completely and squeeze dry.

  2. Build the base:
    Heat butter or olive oil in a skillet over medium-low heat. Add garlic and cook for 30 seconds until fragrant.

  3. Create the creamy sauce:
    Stir in cream cheese and heavy cream. Cook gently, stirring, until smooth and creamy.

  4. Add spinach:
    Fold the prepared spinach into the sauce and stir until evenly coated and thick.

  5. Finish with feta:
    Remove the pan from heat. Add feta cheese and stir gently until just melted. Season with black pepper, nutmeg (if using), and salt only if needed.

  6. Serve warm:
    Spoon into a serving dish or enjoy straight from the pan.

Notes

  • Always add feta off the heat to prevent grainy texture.

  • If the sauce feels too thick, add a splash of milk or cream.

  • For a lighter version, substitute ricotta or Greek yogurt for cream cheese.
