2 ripe bananas (mashed, ~220g)

½ cup full-fat cottage cheese

Instructions

Preheat the oven to 350°F (175°C).

Line a standard loaf pan (8.5 x 4.5″ or 9 x 5″) with parchment paper and lightly grease.

In a large bowl, mash the bananas. Add eggs, cottage cheese, maple syrup, and vanilla extract. Mix until smooth.

In a separate bowl, whisk together the almond flour, baking soda, and cinnamon.

Gradually combine the dry ingredients with the wet mixture. Stir until just incorporated.

Fold in any optional mix-ins like chocolate chips, nuts, or berries.

Pour the batter into the prepared pan and smooth the top.

Bake for 50–60 minutes. Cover with foil after 30–35 minutes if the top browns too quickly.
