Description

This cottage cheese banana bread is a moist, protein-packed twist on the classic loaf. Naturally sweetened with ripe bananas and maple syrup, and made with almond flour for a gluten-free base, this banana bread is perfect for a healthy breakfast, post-workout snack, or kid-friendly treat. It’s easy to make, customizable with your favorite mix-ins, and stays moist for days!


Ingredients

  • 2 ripe bananas (mashed, ~220g)

  • 3 large eggs

  • ½ cup full-fat cottage cheese

  • 3 tbsp maple syrup (or to taste)

  • 2 tsp vanilla extract

  • 2½ cups almond flour

  • 1 tsp baking soda

  • 2 tsp ground cinnamon

  • Optional mix-ins:

    • ½ cup chocolate chips

    • ½ cup chopped walnuts or pecans

    • ½ cup blueberries


Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Line a standard loaf pan (8.5 x 4.5″ or 9 x 5″) with parchment paper and lightly grease.

  3. In a large bowl, mash the bananas. Add eggs, cottage cheese, maple syrup, and vanilla extract. Mix until smooth.

  4. In a separate bowl, whisk together the almond flour, baking soda, and cinnamon.

  5. Gradually combine the dry ingredients with the wet mixture. Stir until just incorporated.

  6. Fold in any optional mix-ins like chocolate chips, nuts, or berries.

  7. Pour the batter into the prepared pan and smooth the top.

  8. Bake for 50–60 minutes. Cover with foil after 30–35 minutes if the top browns too quickly.

  9. Test with a toothpick — it should come out clean or with moist crumbs.

  10. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • For a smoother texture, blend the cottage cheese before mixing.

  • Use very ripe bananas for maximum sweetness and moisture.

  • This recipe works well as muffins — bake for 18–20 minutes.
