Ingredients
For the Coconut Milk Hot Chocolate:

2 cups full-fat coconut milk (canned, well stirred)

2 tablespoons unsweetened cocoa powder

2–3 tablespoons sugar, maple syrup, or coconut sugar (to taste)

1 teaspoon vanilla extract

Pinch of salt
Optional for extra creaminess & topping:

2 tablespoons coconut cream (optional, for thicker hot chocolate)

Instructions

Warm the coconut milk
Add the coconut milk to a small saucepan and place over medium-low heat. Warm gently until steaming, but do not let it boil. -
Whisk in cocoa and sweetener
Whisk in the cocoa powder, making sure there are no lumps. Add sugar or your chosen sweetener and continue whisking until smooth and combined. -
Add vanilla and salt
Stir in the vanilla extract and a small pinch of salt. If you’re using coconut cream for extra richness, whisk it in now until the hot chocolate is silky and creamy. -
Adjust to taste
Taste and adjust sweetness or cocoa level as needed. If you like it darker, add a little more cocoa; if you like it sweeter, add a touch more sugar or syrup. -
Serve
