Description

This Chicken Cucumber Yogurt Dill is a light, refreshing meal made with tender cooked chicken, crisp cucumber, and a creamy Greek yogurt dill sauce. Perfect for quick lunches, meal prep, or an easy no-cook dinner.

Ingredients

– 2 cups cooked chicken, shredded or chopped

– 1 large cucumber, diced (and patted dry)

– 1 cup plain Greek yogurt

– 2 tablespoons fresh dill, chopped

– 1 tablespoon lemon juice

– Salt and pepper to taste

– Optional: lettuce leaves for serving

Instructions

1. In a large bowl, combine the cooked chicken and diced cucumber.

2. In a separate bowl, whisk together the Greek yogurt, dill, lemon juice, salt, and pepper.

3. Pour the yogurt dressing over the chicken mixture and toss until evenly coated.

4. Serve chilled or at room temperature, on lettuce leaves or tucked into wraps.

Notes

– For the best texture, use thick Greek yogurt and pat the cucumber dry before mixing.

– Chill for 20–30 minutes if you have time so the flavors blend.

– Store leftovers in an airtight container in the fridge for up to 3 days.
