For the Cherry Topping

  • 1 can (21 oz) cherry pie filling

  • Optional: extra chopped pistachios for garnish


Instructions

1. Make the Crust

  1. Combine graham cracker crumbs, sugar, and melted butter.

  2. Press firmly into an 8–9 inch springform pan.

  3. Chill for at least 20–30 minutes.

2. Make the Pistachio Filling

  1. Beat softened cream cheese until smooth.

  2. Add pistachio pudding mix (or pistachio paste) and powdered sugar.

  3. In a separate bowl, whip the heavy cream until stiff peaks form.

  4. Fold the whipped cream into the pistachio mixture until light and airy.

  5. Spread over the chilled crust and smooth the top.

3. Chill the Cheesecake

  1. Refrigerate for at least 4 hours, or preferably overnight for a perfect set.

4. Add Cherry Topping

  1. Once the cheesecake is fully set, spoon cherry pie filling over the top.

  2. Garnish with chopped pistachios.
