Description

This cheesy ranch potatoes and sausage bake is the ultimate comfort food – creamy, savory, and irresistibly hearty. With just a few pantry staples and minimal prep, this one-pan wonder delivers a crowd-pleasing dinner perfect for busy weeknights or lazy Sunday brunch.   • 1.5 lbs baby potatoes (halved or quartered)

  • 12 oz smoked sausage, sliced into rounds

  • 1 cup shredded cheddar cheese

  • 1/2 cup sour cream

  • 1/2 cup ranch dressing

  • 1 packet ranch seasoning mix

  • 2 tablespoons olive oil

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon paprika (optional)

  • 2 tablespoons chopped green onions (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 9×13″ baking dish or line it with parchment paper.

  2. In a large mixing bowl, toss the potatoes with olive oil, ranch seasoning, garlic powder, paprika, and black pepper until evenly coated.

  3. Spread potatoes into the baking dish and bake for 20 minutes, uncovered.

  4. Remove dish from oven and add sliced sausage. Stir everything gently to mix. Return to oven for an additional 15–20 minutes, or until potatoes are fork-tender and sausage is golden.

  5. While baking, mix sour cream and ranch dressing in a small bowl.

  6. Once potatoes and sausage are cooked, remove from oven and sprinkle cheddar cheese over the top. Drizzle the sour cream ranch mixture over cheese.

  7. Bake for 5–7 more minutes, or until cheese is melted and bubbly.

  8. Garnish with chopped green onions before serving.

Notes

  • You can swap baby potatoes for Yukon Gold or red potatoes.

  • For a spicier version, use hot sausage or add red pepper flakes.
