Ingredients
1 lb chicken breast, cooked and shredded
1/2 cup buffalo sauce
2 cups cooked brown rice
1 cup corn (canned or frozen)
1 cup black beans, rinsed and drained
1 cup cherry tomatoes, halved
1 avocado, sliced
1/4 cup green onions, chopped
1/2 cup ranch dressing
Salt and pepper, to taste
Instructions
1. In a large bowl, toss the shredded chicken with the buffalo sauce until evenly coated.
2. Divide the cooked brown rice between 4 bowls.
3. Top each bowl with buffalo chicken, corn, black beans, cherry tomatoes, and avocado.
4. Drizzle ranch dressing over the top.
5. Finish with green onions, then season with salt and pepper to taste.
6. Serve right away while the chicken and rice are warm.
