Description

This Buffalo Chicken Bowl is a bold, filling meal with saucy buffalo chicken, hearty brown rice, crisp veggies, and a cool ranch drizzle—perfect for a quick weeknight dinner or meal prep.


Ingredients

1 lb chicken breast, cooked and shredded

1/2 cup buffalo sauce

2 cups cooked brown rice

1 cup corn (canned or frozen)

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 avocado, sliced

1/4 cup green onions, chopped

1/2 cup ranch dressing

Salt and pepper, to taste


Instructions

1. In a large bowl, toss the shredded chicken with the buffalo sauce until evenly coated.

2. Divide the cooked brown rice between 4 bowls.

3. Top each bowl with buffalo chicken, corn, black beans, cherry tomatoes, and avocado.

4. Drizzle ranch dressing over the top.
