Description

This Bread Wreath with Baked Brie is a warm, festive pull-apart bread baked around a wheel of creamy brie.   • 1 lb pizza dough (store-bought or homemade)

  • 1 wheel brie cheese (812 oz, rind on)

  • 2 tbsp melted butter or olive oil

  • 1 tbsp fresh rosemary or thyme (optional)

  • ¼ cup dried cranberries or fig jam (optional)

  • Salt, to taste

  • Honey, for drizzling (optional, after baking)


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. Divide the pizza dough into equal pieces.

  3. Place the brie wheel in the center of the baking sheet.

  4. Arrange the dough pieces in a loose circle around the brie, leaving small gaps between each piece.

  5. Lightly score each dough piece with a knife, cutting toward the brie but not touching it.

  6. Brush dough with melted butter or olive oil and sprinkle with herbs and salt.

  7. Bake for 25–30 minutes, until the bread is golden and baked through.

  8. If the bread browns too quickly, loosely tent with foil.

  9. Let rest for 5 minutes before serving. Drizzle with honey if using.

Notes

  • Keep the brie cold until baking to reduce leaking.

  • Score the rind shallowly — do not cut all the way through.

  • Rustic shaping is better than packing the dough tightly.
