Description

Apple and Brie Stuffed Chicken Breast is a cozy yet elegant dinner made with juicy chicken breasts filled with sweet apples and creamy brie cheese. It’s simple enough for a weeknight, but impressive enough for guests — the perfect balance of sweet, savory, and comforting flavors.


Ingredients

  • 2 large boneless, skinless chicken breasts

  • 1 medium apple (Honeycrisp or Granny Smith), thinly sliced

  • 4 oz brie cheese, cut into small slices

  • 1 tbsp olive oil

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder (optional)

  • Fresh thyme or rosemary (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Butterfly each chicken breast horizontally to create a pocket.

  3. Season both sides of the chicken with salt, pepper, and garlic powder.

  4. Layer apple slices and brie pieces inside each chicken breast, leaving a small border.

  5. Fold the chicken closed and secure with toothpicks or kitchen twine.

  6. Heat olive oil in an oven-safe skillet over medium heat.

  7. Sear the stuffed chicken breasts for 2–3 minutes per side, until lightly golden.

  8. Transfer the skillet to the oven and bake for 15–18 minutes, or until the internal temperature reaches 165°F (74°C).

  9. Remove from the oven and let rest for 5 minutes before slicing and serving.

Notes

  • Do not overstuff — less filling helps prevent brie from leaking out.

  • Chilling the stuffed chicken for 10 minutes before cooking helps it hold its shape.

  • Always cook stuffed chicken to temperature, not time.

  • A little melted brie on the pan is normal and delicious.
