Instructions
- Melt the Chocolate:
Place the chocolate in a heatproof bowl. Microwave in 20–30 second bursts, stirring between each, until fully melted. Alternatively, melt gently over a double boiler. Stir in sea salt or any optional flavoring. Let the chocolate cool slightly until warm, not hot. - Whip the Cream:
In a separate chilled bowl, beat the heavy cream with a hand mixer (or whisk) until soft peaks form—smooth, but able to hold their shape. - Combine:
Gently fold the cooled, melted chocolate into the whipped cream using a silicone spatula. Work slowly to keep the mixture light and airy. - Chill:
Divide the mousse among serving glasses, ramekins, or jars. Cover and refrigerate for at least 1 hour, or up to 24 hours, until set. - Serve:

- For a dairy-free or vegan version, use full-fat coconut cream and dairy-free chocolate.
